I have so many childhood memories of Saturdays in December, Christmas baking with my mom, and having these cookies fill the house with the most welcoming aroma. But back then, the traditional recipe called for white flour, and white sugar.

Today, you can make an upgraded version of these traditional delights! The almond meal (you can use almond flour too) and coconut flour makes these cookies totally gluten free!

They are sweetened with coconut sugar, which is rated only at 35 on the glycemic index, meaning it will not spike your insulin like white sugar will. And the molasses, ginger, cinnamon, and clove spices makes these spicy and the perfect holiday treat.

Well, there’s really no reason you can’t eat these all year ’round!

Gluten-Free Molasses Cookies

The perfect partner to a warm cuppa tea.

Ingredients

  • 2 cups almond meal
  • ¾ cup coconut flour
  • ½ cup arrowroot powder can also use tapioca starch
  • 2 teaspoons ground ginger
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • ¼ teaspoon sea salt
  • ¾ cup coconut oil
  • 1 cup coconut sugar
  • 2 large eggs
  • ¼ cup molasses
  • 3 tablespoons coconut sugar for rolling optional

Instructions

  1. Preheat oven to 350F (180C). Line a baking sheet with parchment paper.

  2. In a medium-sized bowl, combine flour, ginger, baking soda, cinnamon, cloves and salt. Set aside.
  3. In a large mixing bowl beat coconut oil on low speed for 30 seconds to soften. Gradually add the coconut sugar and beat until fluffy. Add eggs and molasses, and beat well. Stir dry ingredients into beaten mixture until well combined.
  4. Shape into 1 ½-inch balls. Roll in 3 tablespoons of coconut sugar. Place about 2 ½ inches apart on the parchment-lined baking sheet. Lightly flatten each cookie with the back of a spoon. Bake for 8-10 minutes or until light brown and still puffed. Do not overbake! Let stand 2 minutes before transferring to a wire rack to cool.
  5. Makes about 24 cookies depending on how big you make them.
